So I signed up for this.
This month's challenge is this.
The strange thing is that I don't actually consider vegan/vegetarianism healthy.
I think meat should be a integral part of most healthy diets.
Not to even begin to discuss dairy and eggs.
Also, it takes more then a week to change habits.
But, I signed up. Mostly because I like the idea of challenging myself every month.
And going vegan will certainly be a challenge.
I don't figure a week can hurt much.
Also, my new room mate is vegan, and I think understanding is a good thing.
So, I'll be going animal byproduct free within the next few days.
And I'm excited to see where else this goes.

Good luck! I definitely couldn't do it - especially in Decemeber...with all the holiday meals!
Well, it's the first week so there better not be too much in the way of holiday meals! I will miss hot chocolate, though!
Best of luck! I couldn't do it. I love my animal products way too much, and get grumpy when I don't get meat in my diet!
Besides that, I couldn't actually go it because of health issues. Not without spending a kajillion dollars on supplements, which I most definitely can not afford.
I have faith you can do it though!
If I don't eat at least some form of meat every day I get sick.
I'm surprised at how many people say they couldn't survive without meat for a week. (with the exception of people who have actual health issues, Tab). I clearly think meat is a good thing but, seriously people. Can't?
I'm surrounded by redneck culture. And so that's pretty much the opinion I've always been exposed to.
I know that I would physically be able to. Probably better than I can imagine. I can't imagine that option ever being appealing, however. :)
